Cacio e Pepe
Ingredients:
This is a very simple, but super delicious recipe I like to cook after coming home from work, also served at my wedding. I got the recipe from one of my favorite spots in the neighborhood I live in. Nothing like a weekday pasta with a yummy glass of wine!
- Salt
- 6 ounces pasta; I personally like spaghetti
- 3 tablespoons butter
- 1 teaspoon freshly cracked pepper
- 1/2 cup grated Parmesan cheese
- 1/3 cup grated Pecorino cheese
Preparation:
Bring water to boil in a pot. Season with salt; add pasta and cook, stirring occasionally, for about two minutes. Before tender, drain, but save 3/4 cup pasta cooking water. In a skillet, melt the butter and pepper and cook until the pepper is toasted. Add pasta water to skillet, reduce the heat, and add cheeses. Once it's all a yummy, melty goodness, add pasta. Let cook a bit, or until the pasta is al dente. Enjoy!!!
